Care of Cheese
Yes, by following these simple instructions:
- Wrap cheese in freezer paper
- Freeze in 1-pound packages, sliced or in a chunk
- Cheese can be frozen for up to 6 to 8 weeks
- TO THAW - place frozen cheese in the refrigerator to thaw slowly
Cheese will last for 2 or 3 days at room temperature (72° F) if left in its protective wrap.
On hot summer days:
- Have your cheese double-bagged when traveling more than 2 days
- Keep the cheese in the air-conditioned part of your vehicle, not the trunk where it is the hottest
- If traveling 3 or more days, it is advisable to use an ice chest
When unsliced cheese gets moldy, cut off about 1/8 inch and the cheese will be safe to eat
